My Otah Bun



This was our breakfast yesterday. Unlike store-bought otah buns with thin slice of otah, I use a bigger portion and thicker otah! :) Bought a few of otah pack at the Expo last weekend. The otah was quite spicy and tasted very good. Yummy! My kids like it very much. This is the otah I bought:


I use a Sweet bun dough from "Bread Magic" by Alan Ooi. The sweet bun is very 扎实 and fit the otah very well. 咬劲十足!一极棒!:D

  5. Hi MH, wow, the buns look really soft, just like those sold in bakeries. Can I ask, how long did you need to let the dough rise?

    Once the dough has been kneaded to smooth & elastic and pass the stretch test, leave it to proof for about 30-40 mins or till it double in size. This is the 1st proofing/fermentation.

    2nd proofing:
    Divide dough into prefer size (my otah buns are 60g each). Flatten and roll out. Wrap the filling, roll up and seal the edges. Cover and proof for 40 mins or till buns double in size.

  7. Thanks for answering my queries. I tried making 'straight method' sweet bun dough before and sadly, it didn't turn out right at all. They ended up in the bin as they were dry & stiff! Looking at yours, I'm determined to try your recipe soon. Will let you know if I do. I really like your blog, and shall include it in my upcoming list of blogs I'll follow. Am looking through those that I like and compiling them :D. Look forward to more recipes from you.
